Frank took over East Village Pizza in the heart of Manhattan in 2003, and the dough hasn't changed since. Every EVP Dubai pie follows the same 60–70% hydration, 72-hour cold-proof, and oven technique as the original NYC shop.
Every batch of dough proofs cold for three full days before it ever sees the oven, at 60-70% hydration, the same process, on the same schedule, as the original NYC shop. Most pizzerias, including plenty of other shops calling themselves "New York style," skip this step in favor of same-day dough. We don't, and it shows in the crust.
We bake on the same style of gas deck oven Frank has used in Manhattan since 2003. It's slower and less forgiving than a modern conveyor oven: no belt, no timer doing the thinking for you, just direct heat and a baker who knows the oven's quirks. That's why the crust holds up whether it's a plain cheese slice or a fully loaded pie.
Our double-stacked pizza, two pies baked as one with a filling layered between them, is a signature East Village Pizza format carried over from the original Manhattan shop, not a Dubai-only gimmick. Both layers bake in the same 72-hour dough and the same oven as everything else on the menu.
This isn't a new concept borrowing a name. It's East Village Pizza's first location outside New York, a licensed expansion of the shop Frank has run since 2003, using the exact same recipe and technique. Nothing about the process was simplified or adapted for a new market.

East Village Pizza Dubai is the first location the brand has opened outside New York, set inside The Meadows Village, the Emaar Malls community center anchored by Spinneys. It's a deliberate choice: a residential pocket of Dubai spanning The Meadows, The Springs, The Lakes, and Emirates Hills, with no craft or New York-style pizza brand currently operating from its own community mall.
The menu carries the same range as the Manhattan original: slices and whole pies by the 14-inch or 20-inch, signature pies like the Tartufo, Buffalo Ranch, and Dubai Royale, the double-stacked format the shop is known for, starters, dips, desserts, and a full drinks program. Every item, no matter how it's topped, starts from the same 72-hour cold-fermented dough and bakes in the same style of oven Frank installed in Manhattan in 2003.
