Double-stacked pizza is exactly what it sounds like: two full pies baked one on top of the other as a single pizza, with a filling layered between them instead of open air. It isn't a Dubai-only gimmick. It's a format the original East Village Pizza in Manhattan has run for years, and it made the trip to The Meadows unchanged.
How It's Built
The idea works because both layers bake together in the same 72-hour cold-fermented dough and the same style of Baker's Pride oven Frank has used since 2003. The bottom pie holds the structure. The top pie crisps the way a normal pie would. And whatever sits between them, from pepperoni to a spicy filling, gets sealed in rather than piled on top, which changes the texture more than the flavor: less crunch on that middle layer, more of a dense, almost lasagna-like bite.
Because the filling is enclosed rather than exposed to the oven's direct heat, it also holds moisture differently than a normal topping would. Cheese between the layers stays molten rather than browning, and anything with sauce stays contained instead of pooling on the surface. It's part of why the format reads as a different dish rather than just a thicker pizza.
Why It Works as a Serving Format
It's also, practically speaking, a lot of pizza. Two full pies baked as one means a double-stacked order goes further than a single pie of the same size, which is part of why it works as well for a family dinner as it does split between two people who can't agree on toppings.
