East Village Pizza Dubai isn't a new restaurant borrowing a familiar name. It's the first licensed expansion of the original East Village Pizza in Manhattan, and it runs on the exact same dough recipe, 72-hour proof time, and oven technique Frank has used since 2003. Nothing about the process was simplified or adapted for a new market; The Meadows is the proving ground for whether that licensing model (same product, new city) actually holds up.
